Help! I am hosting a Luau for sixty people. After spending $20 on these leis, I have eighty dollars left in my budget. I already have plates, napkins etc... I just don't know what to make that is delish, cheap and really easy.
Jenni's Virgin Pina Colada Punch. I just bought a box of 100 little drink umbrellas for around $4 at WM. I stick them in the food on platters for a very festive touch. I am sure I will think of more ideas as the day goes on. I have hosted this theme many times. A fun activity is a Hula Hoop Contest. Especially adults get a huge laugh out of this one.
I don't know if you have the main course, but I always think Hawaiian (sp?) Haystacks are fun and go a long way. Also, get the little plastic champagne glasses with umbrellas for a festive and theme coordinating factor for the punch Shauna mentioned in her comment and then just do ice water......could do kiwi water, cucumber water, lemon water, etc. in in a punch bowl. I have a large silver punch bowl......if you need one for whatever you do! You do everything fabulous, so I know it will be great!
No, wish I did, because I haven't done them for a long time, but I think the must haves are shredded boiled chicken mixed in with chicken ala King soup, shredded coconut and those curly noodle things you put in asian salads.......then whatever else. FYI, I was at the Dollar Store in Centerville (by Roberts and Target) and they had a lot of Hawaiian stuff. Cute little bowels to put your misc. haystack items in on your buffet table.
I have a Haystack recipe. I will dig it up. With all the toppings, it is important to have festive containers for each item... the presentation makes this!

I'd make Cafe Rio salads. Your friend Michelle posted an easy looking recipe.

Cafe rio would be good. Liz had a gluten free haystack recipe a little while back I'm sure you could adapt.
